Dilon Rosa is the pitmaster behind the smoke at Rock Salt Restaurant Albany, a family-owned restaurant in Western Australia’s Great Southern.
His journey with food began long before Rock Salt. From family cooking traditions to hospitality studies and international food experiences, Dilon’s path eventually brought him to Albany, where smoke, fire and low-and-slow cooking have become a defining part of Rock Salt today.
At the heart of that transformation is a simple idea: prepare generous food with character, make as much as possible in-house, and create a relaxed restaurant where families, friends and groups can come together.
From Sri Lanka to a Life in Hospitality
Dilon grew up in Sri Lanka in a family with Sinhalese heritage, with some of his earliest food memories connected to his grandmother’s kitchen.
His interest in hospitality eventually took him to Singapore, where he studied Hospitality and Tourism Management and gained experience in the food and beverage industry. Travel and work later exposed him to different cooking traditions and flavours, including experiences in Italy and Texas.
Those experiences helped shape an approach to food based less on one single cuisine and more on understanding flavour, technique, hospitality and the way food brings people together.
Dilon and Michelle later moved to Australia and eventually made Albany home, building their life and restaurant journey together in the Great Southern.
Why Smokehouse Cooking Became Part of Rock Salt
Today, one of Dilon’s biggest focuses is the Rock Salt smokehouse.
Low-and-slow barbecue is very different from simply putting meat on a hot grill. Smokehouse cooking takes time. The preparation, seasoning, smoke, temperature, resting and slicing all contribute to the final result.
That process suits Dilon’s approach to cooking: patience, experimentation and developing flavour over time.
At Rock Salt Restaurant Albany, smoked meats are prepared in-house using Rock Salt’s own seasonings, spice blends, sauces and smoking methods.

Friday night has become Rock Salt’s dedicated Texas Smokehouse experience.
The Friday Texas Smokehouse Buffet brings together low-and-slow favourites such as smoked beef brisket, pulled pork and house-smoked sausages alongside Southern-style chicken, smokehouse sides and house-made sauces.
For Dilon, the smokehouse is not simply another menu category. It has become part of the identity of Rock Salt and a way to bring a style of cooking he is passionate about to Albany.

Rock Salt’s transformation does not stop with barbecue.
The restaurant now brings its smokehouse identity together with seafood and Southern-inspired flavours. Friday focuses on Texas smokehouse cooking, while Saturday becomes The Big Seafood Bash, giving Rock Salt two distinctive weekend dining experiences.
It is this combination that inspired the Rock Salt idea of Where Smoke Meets the Sea.
Dilon’s work in the kitchen continues to develop around smoke, bold flavours and generous food, while Michelle brings another side of the Rock Salt experience through house-made desserts, cocktails and hospitality.
